Pasta Improv Recipes

ITALIAN PASTA IMPROV I

Serves 4

1 pound pasta, preferably a medium or long shape
4 cups mixed chopped onions, garlic and mushrooms
1 tablespoon olive oil
2 cups chopped sausage
1- 2 cups tomato sauce
4 teaspoons chopped fresh oregano
Salt and freshly ground black pepper, to taste

  1. Put a large pot of water on to boil.
  2. Saute onions, garlic and mushrooms in olive oil. If using uncooked sausage, chop it, add it to the onions and saute. If meat choice is cooked, chop it and stir it into the onion mixture.
  3. Cook the pasta according to package directions and drain.
  4. Heat the tomato sauce and stir into pasta. Toss with onion mixture and oregano. Season to taste with salt and pepper and serve.

MEXICAN PASTA IMPROV
Serves 4

1 pound pasta, preferably a medium shape
4 cups mixed cooked, drained canned beans (such as pintos or black beans) and drained, canned corn kernels, or frozen corn kernels, thawed
3 cups mixed chopped, cooked chicken and grated cheddar cheese
1 1/3 cups salsa
2 tablespoons fresh cilantro
Salt and freshly ground black pepper, to taste

  1. Put a large pot of water on to boil.
  2. Chop the chicken and grate the cheese.
  3. Cook the pasta according to package directions. After cooking, rinse under cold water; drain.
  4. Transfer the pasta to a large serving bowl. Toss with beans, chicken, cheese, salsa and cilantro. Season to taste with salt and pepper and serve.

GREEK PASTA IMPROV
Serves 4

1 pound pasta, preferably a small or medium shape
4 cups mixed chopped tomatoes and cucumbers
2 cups crumbled feta cheese
1/4 cup chopped olives
1/4 cup chopped fresh oregano
Salt and freshly ground black pepper, to taste .

  1. Put a large pot of water on to boil.
  2. Chop the tomatoes and cucumbers. Crumble the feta cheese.
  3. Cook the pasta according to package directions. After cooking, rinse under cold water; drain.
  4. Transfer the pasta to a large serving bowl. Toss with tomatoes, cucumbers, feta, olives and oregano. Season to taste with salt and pepper and serve.
