Pasta Mañana (5-8-2008)
For some of us the history of pasta really begins with a can bearing the likeness of a certain grinning, mustachioed fellow in a white toque. The intervening decades have seen pasta evolve from an Italian specialty to a multiethnic American mealtime staple. Because it’s famously inexpensive, enormously versatile, highly satisfying, and an especially effective carrier of different flavors and sauces, restaurateurs and packaged-food manufacturers never seem to run out of creative things to do with pasta.

Dried Pasta Makes a Hearty Meal in Minutes (5-8-2008)
Many people say that dried pasta was brought to Italy by Marco Polo when he returned from China. There are references of pasta in ancient manuscripts dating back to 180 A.D. Dried pasta was actually brought by the Arabs in the 11th century to Italy. Today, most dried pasta is made with kernels of durum wheat ground into semolina and mixed with water to make dough. The pasta is then dried slowly in hot circulating driers.

Don't Rule Out Pasta (4/29/2008)
Despite a recent bad reputation, it's probably not the pasta that's making you fat. All carbs got hit pretty hard in recent years, identified as the culprits in weight gain. Recently, that dietary advice was fine-tuned a bit to encourage choosing whole-grain versions dubbed "quality carbs" such as brown rice, whole-grain breads and whole-wheat pastas. That's because the fiber in whole-grain foods slows down absorption a bit, therefore tempering or preventing the sugar rush blamed for depositing body fat. more.
Beneo Explores Carbohydrates for Weight Management (4/23/2008)
Carbohydrates could be set to play an important role in weight management and the fight against obesity, said experts at the 1st European Beneo Scientific Symposium in Brussels.
Carbohydrates, which provide about 50 per cent of the average energy intake, play an important role in metabolism, and are known to influence insulin levels, and hormones related to appetite, hunger and satiety. more.
